SAN DIEGO — I had this recipe on my first trip to Europe when we were in Milan, Italy. It was at a street-side cafe and the waiter suggested it instead of the typical tiramisu.
I've come close to replicating it, but it has never been as good. It probably has something to do with location.
Italian strawberry parfait
- 1 lb. Fresh strawberries, sliced
- ¼ cup Sugar
- ¼ cup Balsamic vinegar
- 3 or 4 twist Black pepper
- 15 oz. Ricotta cheese mascarpone
- 1 tbsp Lemon zest
- 3 tbsp Honey
- 4 - 5 Almond biscotti, crumbled
Start with the ricotta cheese, mix in lemon zest, honey, and refrigerate for an hour to help the ricotta firm up, but not necessary.
Try to use a creamier textured ricotta chese. Wash, trim, and slice the strawberries, toss with balsamic, sugar and black pepper. Set aside for half an hour to create a nice syrup. Chop up the biscotti small enough to sprinkle on top.
Assemble in a tall narrow glass, strawberries first then the ricotta, and repeat so the last layer is the ricotta. Drizzle the syrup on top and sprinkle with the crumbled biscotti.
