SAN DIEGO — Sticky Pineapple Chicken
1 ½ lbs. chicken breast, cubed
1 cup broccoli flowerets
1 cup fresh pineapple, cubed
½ cup red bell pepper, cubed
3 garlic cloves, diced
1 cup pineapple juice
½ cup sweet chili sauce
¼ cup soy sauce
1 tsp ginger, fresh grated
1/3 cup brown sugar
1 tbsp corn starch
3 - 4 tbsp canola oil
½ cup cilantro, chopped, garnish
Preheat a large thick skillet to a medium-high to high heat. In a separate bowl mix Pineapple juice, Chili sauce, Soy sauce, Brown Sugar, Ginger and Corn Starch. Carefully pour the Canola oil into the hot skillet and then the Chicken, the oil will be very hot so be careful, sear the Chicken for three maybe four minutes.
Add the Broccoli, Red Peppers, and garlic, stir gently still on a medium high heat for a couple of minutes. Next is the sauce, this should tighten up pretty quickly. Finish with the Pineapple and serve with Rice and top with Cilantro.
Both my Mother and Father loved Asian food and we would do something like this all the time, less the Pineapple. It was on my first trip to the North Shore of Oahu, Hawaii where I had the Sticky Pineapple Chicken from a food truck in Haleiwa. That was a long, long time ago in a far-off galaxy.
