SAN DIEGO — I picked this recipe up while catering a New Year's Eve party in Deer Valley, Utah. It is a winner and best served with some Champagne or Prosecco.
Sweet & Savory Brie Puff Pastry Bites
- Mini cupcake pan, makes 24
- 2 puff pastry sheets
- 8 oz. brie cheese
- Orange marmalade
- 3 tbsp pistachios salted and roasted, chopped
Pre-heat your oven to 325°. Let your puff pastry dough defrost, roll it out on a lightly floured cutting board and cut into 2 inch squares, or whatever size you want your bites to be. I use Trader Joe's, but any store-bought puff pastry dough will work.
Place the square over each mini cupcake hole and press down in the center using your finger or the end of a kitchen utensil that is flat, then bake for 10 minutes. Remove from oven and press down in the center again and fill with a small piece of brie cheese, place back in the oven for another 5-6 minutes until the dough is golden brown and the cheese is melted.
Remove from the oven, top with a dollop of orange marmalade and sprinkle with chopped pistachios. Serve while still warm!
